- 1 pound chicken breast, diced
- 2 tablespoons soy sauce (gluten-free)
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 bell pepper, diced
- 1/2 cup peanuts
- 3 green onions, chopped
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 1 tablespoon hoisin sauce
- 1 tablespoon chili paste (optional)
Instructions
- Combine chicken, soy sauce, rice vinegar, and cornstarch in a bowl. Marinate for 15 minutes.
- Heat vegetable oil in a pan over medium heat. Add ginger and garlic, sauté until fragrant.
- Add marinated chicken and cook until no longer pink.
- Add bell pepper, peanuts, and hoisin sauce. Cook for another 5 minutes.
- Stir in chili paste, if using, and then add green onions.
- Serve hot over a bed of steamed rice or noodles.
Notes
For added flavor, marinate the chicken longer than 15 minutes or add more vegetables like broccoli or carrots.
