- 1 cup almond flour
- 1/2 cup coconut flour
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the almond flour, coconut flour, baking soda, and salt.
- In another bowl, combine the honey (or maple syrup), melted coconut oil, and vanilla extract.
- Slowly blend the wet ingredients into the dry ingredients until well mixed.
- If desired, fold in the dark chocolate chips.
- Scoop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let them cool before serving.
Notes
Store in an airtight container at room temperature for about a week. Freeze for longer storage.
