- 1 cup almond flour
- 1/2 cup coconut flour
- 1/2 cup powdered sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1 large egg
- 1 cup brewed coffee, cooled
- 1/4 cup cocoa powder
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix together almond flour, coconut flour, powdered sugar, baking soda, and salt in a bowl.
- Cream together the softened butter and vanilla extract in a separate bowl. Add the egg and beat until well combined.
- Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
- Roll the dough into small balls and place them on the prepared baking sheet.
- Flatten each ball gently with the bottom of a glass to form cookies.
- Bake for 12-15 minutes or until the edges are golden.
- Allow to cool before dipping the cookies in cooled coffee and dusting with cocoa powder.
