Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup jam (your choice)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine almond flour, coconut flour, melted coconut oil, honey (or maple syrup), vanilla extract, and salt in a mixing bowl. Mix until a dough forms.
  3. Scoop out small amounts of dough and roll them into balls. Place them on the prepared baking sheet.
  4. Use your thumb or the back of a spoon to make an indentation in the center of each ball.
  5. Fill each indentation with your choice of jam.
  6. Bake for 10-12 minutes, or until the edges are lightly golden.
  7. Let cool before serving.
