A delicious twist on a classic dish, this Gluten-Free Sweet and Sour Chicken combines juicy chicken, sweet pineapple, and colorful veggies in a flavorful sauce.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup bell pepper, chopped
  • 1/2 cup onion, chopped
  • 1/2 cup gluten-free soy sauce
  • 1/4 cup apple cider vinegar
  • 1/4 cup honey or maple syrup
  • 2 tablespoons cornstarch
  • 2 tablespoons oil (for cooking)
  • Salt and pepper to taste
  • Rice or cauliflower rice, for serving

Instructions

  1. Mix the gluten-free soy sauce, apple cider vinegar, honey or maple syrup, and cornstarch to create the sauce.
  2. Heat oil in a large skillet over medium heat.
  3. Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
  4. Add the bell pepper, onion, and pineapple chunks to the skillet.
  5. Pour the sauce over the chicken and vegetables, stirring to coat.
  6. Cook for another 2-3 minutes until the sauce thickens slightly.
  7. Serve over rice or cauliflower rice.

Notes

Feel free to add other vegetables like broccoli or snap peas for more color and nutrients. If you prefer a spicier version, add some red pepper flakes to the sauce.
