Deliciously easy gluten-free blondies combining classic peanut butter and jelly flavors in a simple dessert.

- 1 cup Creamy Peanut Butter
- 1/3 cup Maple Syrup
- 1/4 cup Melted Coconut Oil
- 2 large Eggs
- 1 tsp Vanilla Extract
- 1/2 cup Almond Flour
- 1/2 tsp Baking Soda
- 1/2 cup Strawberry Jam
- 1/4 cup Chopped Peanuts
Instructions
- Preheat the oven to 350°F and line an 8×8 inch square baking dish with parchment paper.
- Combine the creamy peanut butter, maple syrup, melted coconut oil, eggs, and vanilla extract until smooth.
- Stir in the almond flour and baking soda until fully incorporated.
- Pour the batter into the prepared baking dish and spread it evenly.
- Drop spoonfuls of strawberry jam all over the top of the batter and use a knife to gently swirl it in, then sprinkle with chopped peanuts.
- Bake for 22 to 25 minutes until the center is set, then allow it to cool completely before cutting into squares.
Notes
These blondies are best served at room temperature. For more flavor, top with extra strawberry jam or peanuts.
