- 2 cups gluten-free oats
- 1 cup almond flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1/2 cup milk
- 1 cup marshmallow fluff
- 1/2 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Combine the gluten-free oats, almond flour, brown sugar, granulated sugar, baking soda, and salt in a large mixing bowl.
- Whisk together the eggs, melted butter, vanilla extract, and milk in another bowl.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool completely.
- Beat together marshmallow fluff and powdered sugar until smooth for the filling.
- Slice the bread lengthwise and spread the filling in between the slices.
- Serve and enjoy!
Notes
For best flavor, consider adding a dash of cinnamon or mixing in chocolate chips or nuts to the batter.
