Description

A delightful gluten-free bread that combines the comforting flavors of oatmeal cream pies with a soft, moist texture.


Ingredients

  • 2 cups gluten-free oats
  • 1 cup almond flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 cup marshmallow fluff
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Combine the gluten-free oats, almond flour, brown sugar, granulated sugar, baking soda, and salt in a large mixing bowl.
  3. Whisk together the eggs, melted butter, vanilla extract, and milk in another bowl.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool completely.
  8. Beat together marshmallow fluff and powdered sugar until smooth for the filling.
  9. Slice the bread lengthwise and spread the filling in between the slices.
  10. Serve and enjoy!

Notes

For best flavor, consider adding a dash of cinnamon or mixing in chocolate chips or nuts to the batter.
