Ingredients

- 1 cup gluten free flour
- 1/2 cup cocoa powder
- 1/2 cup coconut sugar or brown sugar
- 1/4 cup coconut oil, melted
- 1/4 cup almond milk
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup sweet mochi, cut into small pieces
- Chocolate chips (optional, for topping)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together gluten free flour, cocoa powder, coconut sugar, baking soda, and salt.
- In another bowl, combine melted coconut oil, almond milk, and vanilla extract.
- Pour the wet ingredients into the dry mixture and stir until combined.
- Take a small amount of the dough and flatten it in your palm. Place a piece of mochi in the center and wrap the dough around it, rolling it into a ball.
- Place the balls onto the prepared baking sheet, spacing them apart. If desired, top with chocolate chips.
- Bake for 10-12 minutes until the edges are set.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Serve warm or at room temperature. Store in an airtight container for up to three days at room temperature or a week in the fridge.
