Description

Delicious gluten-free empanadas filled with savory meat, cheese, or veggies, perfect for any occasion.


Ingredients

  • 2 cups gluten-free flour
  • 1/2 cup cold butter, cubed
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 egg
  • 45 tablespoons cold water
  • 1 cup meat or cheese filling (or veggie filling, as preferred)
  • 1 egg (for egg wash)

Instructions

  1. Mix gluten-free flour, salt, and baking powder in a bowl.
  2. Cut in cold butter until the mixture resembles coarse crumbs.
  3. Whisk the egg in a separate bowl and add it to the flour mixture.
  4. Stir in cold water, one tablespoon at a time, until a dough forms.
  5. Chill the dough for 30 minutes.
  6. Preheat the oven to 400°F (200°C).
  7. Roll out the dough on a floured surface, then cut into circles.
  8. Place filling on one half of each circle, fold over, and press to seal.
  9. Brush the tops with egg wash.
  10. Bake for 20-25 minutes or until golden.
  11. Serve hot.

Notes

These empanadas are great by themselves or with your favorite dipping sauces like salsa or guacamole. Store in an airtight container for up to three days.
