Ingredients

- 2 cups gluten-free flour
- 1/2 cup cold butter, cubed
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 egg
- 4–5 tablespoons cold water
- 1 cup meat or cheese filling (or veggie filling, as preferred)
- 1 egg (for egg wash)
Instructions
- Mix gluten-free flour, salt, and baking powder in a bowl.
- Cut in cold butter until the mixture resembles coarse crumbs.
- Whisk the egg in a separate bowl and add it to the flour mixture.
- Stir in cold water, one tablespoon at a time, until a dough forms.
- Chill the dough for 30 minutes.
- Preheat the oven to 400°F (200°C).
- Roll out the dough on a floured surface, then cut into circles.
- Place filling on one half of each circle, fold over, and press to seal.
- Brush the tops with egg wash.
- Bake for 20-25 minutes or until golden.
- Serve hot.
Notes
These empanadas are great by themselves or with your favorite dipping sauces like salsa or guacamole. Store in an airtight container for up to three days.
