Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 egg

  • 1/2 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the gluten-free flour, brown sugar, cinnamon, baking soda, and salt.
  3. In a separate bowl, cream the softened butter, then add the egg and vanilla extract, mixing until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  5. Roll the dough into a log shape and slice it into cookies.
  6. Place cookies on a baking sheet lined with parchment paper.
  7. Bake for about 10-12 minutes or until lightly golden.
  8. To make the icing, mix powdered sugar with milk until smooth, then drizzle it over the cooled cookies.
