- 1/2 cup Cocoa Powder
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 cup Softened Butter
- 1 cup Granulated Sugar
- 1 large Egg
- 1 cup Buttermilk
- 1/2 cup Softened Butter (for filling)
- 2 cups Powdered Sugar
- 1 tsp Peppermint Extract
- 2 drops Green Food Coloring
Instructions
- Preheat your oven to 350°F and line two baking sheets with parchment paper.
- Whisk together the gluten free all-purpose flour, cocoa powder, baking soda, and salt in a bowl.
- Cream the softened butter and granulated sugar in another bowl until fluffy, then add the egg and mix well.
- Alternately mix in the dry ingredients and buttermilk until you have a smooth, thick batter.
- Drop spoonfuls of batter onto the baking sheets, about 2 inches apart.
- Bake for 10-12 minutes until the cakes spring back when touched, then let them cool completely on wire racks.
- Beat the softened butter, powdered sugar, peppermint extract, and green food coloring until a fluffy green frosting forms for the filling.
- Spread a generous amount of the mint filling onto the flat side of one chocolate cake, then top with a second cake to form a whoopie pie.
Notes
Store in an airtight container at room temperature for up to three days or refrigerate for about a week. Can be frozen wrapped individually.
