Ingredients

  • 1.5 cups Gluten Free All-Purpose Flour
  • 1/2 cup Cocoa Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 cup Softened Butter
  • 1 cup Granulated Sugar
  • 1 large Egg
  • 1 cup Buttermilk
  • 1/2 cup Softened Butter (for filling)
  • 2 cups Powdered Sugar
  • 1 tsp Peppermint Extract
  • 2 drops Green Food Coloring

Instructions

  1. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  2. Whisk together the gluten free all-purpose flour, cocoa powder, baking soda, and salt in a bowl.
  3. Cream the softened butter and granulated sugar in another bowl until fluffy, then add the egg and mix well.
  4. Alternately mix in the dry ingredients and buttermilk until you have a smooth, thick batter.
  5. Drop spoonfuls of batter onto the baking sheets, about 2 inches apart.
  6. Bake for 10-12 minutes until the cakes spring back when touched, then let them cool completely on wire racks.
  7. Beat the softened butter, powdered sugar, peppermint extract, and green food coloring until a fluffy green frosting forms for the filling.
  8. Spread a generous amount of the mint filling onto the flat side of one chocolate cake, then top with a second cake to form a whoopie pie.
