Delightful gluten-free chocolate chip scones that are easy to make and perfect for breakfast or a snack.

- 8 oz Almond Flour
- 2 Eggs
- 1.5 oz Coconut Flour
- 4 oz Butter (melted)
- 1/3 cup Granulated Sugar (Swerve Sweetener recommended)
- 1/2 cup Chocolate Chips (sugar-free recommended)
- 1 teaspoon Vanilla Extract
- 2 teaspoons Baking Powder
- 1/2 teaspoon Salt
Instructions
- Combine the coconut flour, almond flour, salt, and baking powder in a medium bowl. Mix well until evenly combined.
- Mix the melted butter, sugar or sweetener, and vanilla extract in a separate bowl. Using a hand mixer, beat for 2-3 minutes until well combined.
- Add the eggs and mix well. Gradually add the flour mixture, and mix until a cohesive dough forms.
- Fold in the chocolate chips using your hands.
- Form the dough into a ball and place it on a baking sheet lined with parchment paper. Press it down to create a flat disc.
- Score the dough into wedges using a pizza cutter or knife.
- Bake for about 15-18 minutes until golden brown. Enjoy!
Notes
Serve warm with butter or jam and pair with tea or coffee. Can be stored in an airtight container at room temperature for up to 3 days or frozen for up to 3 months.
