Description
A comforting and delicious gluten-free broccoli cheddar soup, creamy, cheesy, and packed with healthy broccoli.
Ingredients

- 2 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 tablespoon cornstarch (optional, for thickening)
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, and sauté until translucent.
- Add broccoli florets and vegetable broth to the pot. Bring to a boil, then reduce heat and let simmer until the broccoli is tender, about 10-15 minutes.
- Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
- Stir in milk and shredded cheddar cheese until melted and combined.
- If a thicker consistency is desired, mix cornstarch with a little water and add to the soup, stirring until thickened.
- Season with salt and pepper to taste.
- Serve warm.
Notes
For a richer flavor, use sharper cheddar cheese. Consider mixing in different types of cheeses or adding a pinch of red pepper flakes for spice.
