Description

A comforting and delicious gluten-free broccoli cheddar soup, creamy, cheesy, and packed with healthy broccoli.


Ingredients

Scale
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon cornstarch (optional, for thickening)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, and sauté until translucent.
  2. Add broccoli florets and vegetable broth to the pot. Bring to a boil, then reduce heat and let simmer until the broccoli is tender, about 10-15 minutes.
  3. Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
  4. Stir in milk and shredded cheddar cheese until melted and combined.
  5. If a thicker consistency is desired, mix cornstarch with a little water and add to the soup, stirring until thickened.
  6. Season with salt and pepper to taste.
  7. Serve warm.

Notes

For a richer flavor, use sharper cheddar cheese. Consider mixing in different types of cheeses or adding a pinch of red pepper flakes for spice.
