Ingredients

  • 4 large ripe bananas
  • 1/4 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/4 cup heavy cream
  • 1/2 cup chopped pecans
  • 4 scoops vanilla ice cream

Instructions

  1. Peel the ripe bananas and slice them diagonally into thick 1-inch pieces. Set aside.
  2. In a large cast iron skillet, melt the unsalted butter over medium heat.
  3. Stir in the brown sugar and ground cinnamon, cooking until the sugar dissolves and the mixture begins to bubble slightly.
  4. Add the banana slices to the skillet and cook for about 2 minutes on each side, allowing them to soften and caramelize slightly in the butter syrup.
  5. Remove the skillet from the heat and carefully stir in the vanilla extract and heavy cream until a rich caramel sauce forms around the bananas.
  6. Sprinkle the chopped pecans evenly over the warm, sticky bananas.
  7. Top the warm skillet immediately with scoops of vanilla ice cream and serve directly from the pan.

Notes

For a traditional flavor, add a splash of rum after the brown sugar has melted.
