Description

A delicious and hearty gluten-free bread packed with crispy bacon and tangy feta cheese, perfect for any meal.


Ingredients

  • 6 strips Bacon (thick cut, crispy)
  • 6 oz Feta Cheese Block (broken into chunks)
  • 2 tbsp Fresh Chives / Green Onions, chopped
  • 2 ½ cups Super Fine Almond Flour
  • ½ tsp Xanthan Gum
  • 1 tbsp Baking Powder
  • ½ tsp Garlic Powder
  • ½ tsp Black Pepper
  • 4 large Eggs
  • 1/3 cup Olive Oil
  • 1/3 cup Sour Cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line your loaf pan with parchment paper for easy removal later.
  2. Cook the bacon until it’s dark and crispy, then drain on paper towels and let it cool completely.
  3. In a large bowl, whisk together the almond flour, xanthan gum, baking powder, garlic powder, and black pepper.
  4. In a separate bowl, whisk the eggs, olive oil, and sour cream until smooth.
  5. Pour the wet mixture into the dry ingredients and stir well; the batter will be thick.
  6. Gently fold in the feta chunks, cooled bacon, and chopped chives.
  7. Spoon the thick batter into the loaf pan and bake for 50–60 minutes or until golden and a toothpick comes out clean.
  8. Allow the bread to cool in the pan for about 20-30 minutes, then move to a wire rack to cool completely.

Notes

Serve warm with butter, alongside soup or salad, or slice and toast for a crispy treat. Can be frozen for longer storage.
