- 6 strips Bacon (thick cut, crispy)
- 6 oz Feta Cheese Block (broken into chunks)
- 2 tbsp Fresh Chives / Green Onions, chopped
- 2 ½ cups Super Fine Almond Flour
- ½ tsp Xanthan Gum
- 1 tbsp Baking Powder
- ½ tsp Garlic Powder
- ½ tsp Black Pepper
- 4 large Eggs
- 1/3 cup Olive Oil
- 1/3 cup Sour Cream
Instructions
- Preheat your oven to 350°F (175°C) and line your loaf pan with parchment paper for easy removal later.
- Cook the bacon until it’s dark and crispy, then drain on paper towels and let it cool completely.
- In a large bowl, whisk together the almond flour, xanthan gum, baking powder, garlic powder, and black pepper.
- In a separate bowl, whisk the eggs, olive oil, and sour cream until smooth.
- Pour the wet mixture into the dry ingredients and stir well; the batter will be thick.
- Gently fold in the feta chunks, cooled bacon, and chopped chives.
- Spoon the thick batter into the loaf pan and bake for 50–60 minutes or until golden and a toothpick comes out clean.
- Allow the bread to cool in the pan for about 20-30 minutes, then move to a wire rack to cool completely.
Notes
Serve warm with butter, alongside soup or salad, or slice and toast for a crispy treat. Can be frozen for longer storage.
