Description

Delicious and healthy gluten-free rolls made with sweet potatoes, perfect for family dinners and gatherings.


Ingredients

  • 2 cups sweet potato, mashed
  • 2 cups gluten-free all-purpose flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup melted butter or coconut oil
  • 1 teaspoon salt
  • 1 tablespoon active dry yeast
  • 1 teaspoon baking powder
  • 1/2 cup warm water (about 110°F)
  • 1/2 teaspoon ground cinnamon (optional)

Instructions

  1. Dissolve the yeast in warm water and let it sit for about 5 minutes until it becomes frothy.
  2. Combine the mashed sweet potato, gluten-free flour, honey (or maple syrup), melted butter (or coconut oil), salt, and baking powder in a large mixing bowl.
  3. Add the yeast mixture to the dry ingredients and mix until a dough forms.
  4. Knead the dough for a few minutes until smooth.
  5. Cover the bowl with a towel and let the dough rise in a warm place for about 30 minutes.
  6. Preheat the oven to 375°F (190°C).
  7. Shape the dough into small rolls and place them on a greased baking sheet.
  8. Let the rolls rise for another 15-20 minutes.
  9. Bake in the preheated oven for 20-25 minutes or until golden brown.
  10. Remove from the oven and let cool slightly before serving.

Notes

These rolls are best served warm and can be enjoyed plain or with butter. Store leftovers in an airtight container for up to 2 days or freeze for up to 3 months.
