- 1/2 cup almond flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, chilled
- 1 cup granulated sugar
- 3 large eggs
- 1/4 cup yuzu juice
- 2 tbsp lemon juice
- 1 tbsp lemon zest
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C).
- Mix gluten-free flour, almond flour, powdered sugar, and chilled butter until crumbly. Press into a lined 8×8-inch pan.
- Bake crust for 15 minutes until lightly golden.
- Whisk eggs, granulated sugar, yuzu juice, lemon juice, zest, and salt until smooth.
- Pour filling over the baked crust.
- Bake for 20-25 minutes until set.
- Cool completely before cutting into bars.

- Use chilled butter for a flaky crust.
- Let bars cool fully for clean cuts.
