Ingredients

  • 1/2 cup almond flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, chilled
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup yuzu juice
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix gluten-free flour, almond flour, powdered sugar, and chilled butter until crumbly. Press into a lined 8×8-inch pan.
  3. Bake crust for 15 minutes until lightly golden.
  4. Whisk eggs, granulated sugar, yuzu juice, lemon juice, zest, and salt until smooth.
  5. Pour filling over the baked crust.
  6. Bake for 20-25 minutes until set.
  7. Cool completely before cutting into bars.
