Instructions
Preheat your smoker to 250°F (120°C).
In a cast iron skillet or disposable aluminum pan, add the cooked sausage, Velveeta cubes, shredded cheeses, Rotel, onion, bell pepper, jalapeño, and smoked paprika.
Place the skillet uncovered in the smoker. Smoke for 1 hour, stirring every 20 minutes, until the cheese is fully melted and smooth.
Carefully remove from the smoker. Stir well, then serve hot with tortilla chips.
Notes
For even more flavor, add a handful of wood chips like hickory or mesquite. You can substitute hot sausage or pepper jack cheese for extra spice.
