Ingredients
  

Main Ingredients

  • 1 lb ground breakfast sausage or chorizo cooked and drained
  • 2 lb Velveeta cheese cubed
  • 1 can Rotel tomatoes with green chilies drained
  • 1 cup Monterey Jack cheese shredded
  • 1 cup cheddar cheese shredded
  • 1 jalapeño pepper seeded and diced (optional, for extra heat)
  • 1 small white onion finely diced
  • 1 red bell pepper diced
  • 1 tsp smoked paprika
  • Tortilla chips for serving

Instructions
 

  • Preheat your smoker to 250°F (120°C).
  • In a cast iron skillet or disposable aluminum pan, add the cooked sausage, Velveeta cubes, shredded cheeses, Rotel, onion, bell pepper, jalapeño, and smoked paprika.
  • Place the skillet uncovered in the smoker. Smoke for 1 hour, stirring every 20 minutes, until the cheese is fully melted and smooth.
  • Carefully remove from the smoker. Stir well, then serve hot with tortilla chips.

Notes

For even more flavor, add a handful of wood chips like hickory or mesquite. You can substitute hot sausage or pepper jack cheese for extra spice.
