Ingredients
  

For the Steak

  • 2 pounds flank or sirloin steak
  • 1/4 cup extra-virgin olive oil
  • 3 cloves garlic minced
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper

For the Grain Base

  • 2 cups cooked farro (or brown rice, quinoa, or couscous)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt

Toppings

  • 1 pint cherry tomatoes halved
  • 1 large English cucumber diced
  • 1/2 red onion thinly sliced
  • 1 yellow bell pepper chopped
  • 1/2 cup Kalamata olives pitted and halved
  • 1/2 cup crumbled feta cheese
  • 1 avocado sliced (optional)
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh mint chopped

For the Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1/2 English cucumber grated and squeezed dry
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon fresh dill chopped
  • 2 cloves garlic minced
  • Salt and pepper to taste

Instructions
 

  • In a bowl, mix olive oil, garlic, lemon juice, oregano, smoked paprika, cumin, salt, and pepper. Pour over steak and marinate for 1–8 hours in the fridge.
  • Mix all tzatziki ingredients in a bowl (Greek yogurt, grated cucumber, lemon juice, dill, garlic, salt, pepper). Refrigerate until serving.
  • Prepare farro or other grains. Toss with olive oil and salt. Set aside.
  • Preheat grill to medium-high. Grill steak 4–5 min per side. Rest for 5 min, then slice thinly against the grain.
  • Prep all toppings: halve tomatoes, dice cucumber and bell pepper, slice onion, pit and halve olives, slice avocado, and chop herbs.
  • Assemble bowls: add grains, steak, veggies, feta, herbs, and top with tzatziki. Serve immediately and enjoy!

Notes

Swap steak for chicken or chickpeas for a twist. Prepare ingredients ahead for quick assembly. Perfect for meal prep or summer parties.
