sushi-grade salmon
finely diced

Instructions
Rinse rice until water runs clear. Cook with water until tender. Mix rice vinegar, sugar, and salt into hot rice.
Spread rice on an oiled tray. Press down firmly. Refrigerate for at least 2 hours, then cut into squares.
Mix diced salmon with mayonnaise, sriracha, soy sauce, sesame oil, chives, and lemon juice. Chill until needed.
Heat oil in a skillet. Fry rice squares until golden and crispy. Drain on paper towels.
Top each rice square with salmon mixture, avocado, and sprinkle with sesame seeds. Serve immediately.
Notes
For a spicier version, add extra sriracha to your salmon mixture!
