Ingredients
  

Rice Base

  • 2 cups sushi rice rinsed well
  • 2.5 cups water
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 tbsp vegetable oil plus more for frying

Salmon Topping

  • 8 oz sushi-grade salmon finely diced
  • 2 tbsp mayonnaise
  • 1 tbsp sriracha optional for spice
  • 1 tsp soy sauce or tamari for gluten-free
  • 1 tsp sesame oil
  • 2 tsp chopped chives or scallions
  • 1 tsp lemon juice
  • 1 avocado sliced or diced
  • 1 tbsp toasted sesame seeds

Instructions
 

  • Rinse rice until water runs clear. Cook with water until tender. Mix rice vinegar, sugar, and salt into hot rice.
  • Spread rice on an oiled tray. Press down firmly. Refrigerate for at least 2 hours, then cut into squares.
  • Mix diced salmon with mayonnaise, sriracha, soy sauce, sesame oil, chives, and lemon juice. Chill until needed.
  • Heat oil in a skillet. Fry rice squares until golden and crispy. Drain on paper towels.
  • Top each rice square with salmon mixture, avocado, and sprinkle with sesame seeds. Serve immediately.

Notes

For a spicier version, add extra sriracha to your salmon mixture!
