Ingredients

- 1 cup gluten free all-purpose flour
- 1/2 cup almond flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- Nutella, for filling
Instructions
- Preheat your oven to 350°F (175°C).
- Mix the gluten free all-purpose flour, almond flour, baking soda, and salt in a bowl.
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy in a separate bowl.
- Beat in the vanilla extract and egg until well combined.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Scoop out a tablespoon of dough, flatten it in your palm, and place a small amount of Nutella in the center.
- Enclose the Nutella with the dough, rolling it into a ball.
- Place the balls on a baking sheet lined with parchment paper, spacing them apart.
- Bake for 10-12 minutes or until lightly golden.
- Let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Serve warm for gooey Nutella. Store in an airtight container for up to a week.
