Description

Delicious soft and chewy cookies filled with Nutella, perfect for a gluten-free treat.


Ingredients

  • 1 cup gluten free all-purpose flour
  • 1/2 cup almond flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • Nutella, for filling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the gluten free all-purpose flour, almond flour, baking soda, and salt in a bowl.
  3. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy in a separate bowl.
  4. Beat in the vanilla extract and egg until well combined.
  5. Add the dry ingredients to the wet ingredients and mix until just combined.
  6. Scoop out a tablespoon of dough, flatten it in your palm, and place a small amount of Nutella in the center.
  7. Enclose the Nutella with the dough, rolling it into a ball.
  8. Place the balls on a baking sheet lined with parchment paper, spacing them apart.
  9. Bake for 10-12 minutes or until lightly golden.
  10. Let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Serve warm for gooey Nutella. Store in an airtight container for up to a week.
