Ingredients

  • 1/2 cup pistachios, finely chopped
  • 1/4 cup protein powder (vanilla or unflavored)
  • 1/4 cup honey or maple syrup
  • 1 egg
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix almond flour, chopped pistachios, protein powder, and salt in a bowl.
  3. Add honey, egg, and vanilla extract. Stir until well combined.
  4. Scoop tablespoon-sized portions onto a lined baking sheet.
  5. Flatten slightly with the back of a spoon.
  6. Bake for 10-12 minutes or until edges turn golden.
  7. Let cool before serving.
