- 1 cup almond flour
- 1/2 cup pistachios, finely chopped
- 1/4 cup protein powder (vanilla or unflavored)
- 1/4 cup honey or maple syrup
- 1 egg
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- Mix almond flour, chopped pistachios, protein powder, and salt in a bowl.
- Add honey, egg, and vanilla extract. Stir until well combined.
- Scoop tablespoon-sized portions onto a lined baking sheet.
- Flatten slightly with the back of a spoon.
- Bake for 10-12 minutes or until edges turn golden.
- Let cool before serving.
Notes
- Store in an airtight container for up to 5 days.
- For extra crunch, toast the pistachios before chopping.
- Substitute almond flour with coconut flour if preferred.
