Description

A delicious, nutritious treat made with almond flour and cashew butter, this Healthy Cookie Dough Bark satisfies sweet cravings without the guilt.


Ingredients

Scale
  • 1 and 1/2 cups almond flour
  • 1/4 cup cashew butter (or peanut butter)
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup chocolate chips
  • 1 cup chocolate chips
  • 1 tsp coconut oil
  • Flaky sea salt, optional

Instructions

  1. In a bowl, mix the almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt together until everything is well combined.
  2. Stir in the chocolate chips.
  3. Place parchment paper on a cutting board or large plate. Transfer the cookie dough mixture onto the parchment paper.
  4. With a silicone spatula or your clean hands, press the cookie dough firmly to flatten it into about a 1/2-inch thick layer. Set this aside.
  5. In a small bowl, add the 1 cup of chocolate chips and 1 teaspoon of coconut oil. Microwave them in 30-second intervals, stirring in between, until completely melted.
  6. Pour and spread the melted chocolate over the flattened cookie dough and sprinkle flaky sea salt on top.
  7. Chill the cookie dough bark in the freezer for 10 minutes to set.
  8. Once set, chop it into large chunks. Enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to a week. You can also freeze for longer storage.
