Ingredients

  • 2 cups grated zucchini
  • 1 1/2 cups gluten free flour blend
  • 1 cup sugar or coconut sugar
  • 1/2 cup vegetable oil or melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg (optional)
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Mix the grated zucchini, sugar, and melted oil together in a large bowl.
  3. Add in the eggs and vanilla extract, mixing well.
  4. Whisk together the gluten free flour, baking soda, baking powder, salt, cinnamon, and nutmeg in another bowl.
  5. Gradually add the dry ingredients into the wet ingredients, mixing just until combined.
  6. Fold in any nuts or chocolate chips if desired.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  9. Let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Notes

For sweetness, you can adjust the sugar or use different types of sugar. Wrap bread in plastic or an airtight container for storage.
