- 1 cup gluten free all-purpose flour
- 1 cup almond milk (or other dairy-free milk)
- 4 large eggs
- 1/4 teaspoon salt
- 2 tablespoons vegetable oil or beef drippings
Instructions
- Preheat the oven to 425°F (220°C).
- Whisk together the gluten free flour, almond milk, eggs, and salt until smooth.
- Pour the vegetable oil or drippings into a muffin tin or individual pudding molds, filling each about 1/3 full.
- Heat the oil in the oven for about 5 minutes until hot.
- Carefully pour the batter into the hot oil, filling each mold about 2/3 full.
- Bake for 20-25 minutes until the puddings are puffed and golden brown.
- Serve immediately.
Notes
Ensure the oil is very hot before adding the batter for best results. They are best enjoyed fresh from the oven.
