Ingredients

  • 1 cup almond flour
  • 1/2 cup shredded toasted coconut
  • 1/4 cup coconut sugar
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Zest of 1 lime
  • Juice of 1 lime
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine almond flour, shredded coconut, coconut sugar, baking soda, and salt in a mixing bowl.
  3. Whisk together honey (or maple syrup), melted coconut oil, egg, vanilla extract, lime zest, and lime juice in another bowl.
  4. Mix the wet ingredients into the dry ingredients until well combined.
  5. Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, flattening them slightly.
  6. Bake for 12-15 minutes or until the edges are golden.
  7. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
