- 8 oz cream cheese
- 1 cup mascarpone cheese
- 1 cup powdered sugar
- 1 cup heavy cream
- 1 cup brewed coffee (cooled)
- 1 tsp vanilla extract
- 1 package gluten-free ladyfingers
- Cocoa powder (for dusting)
- Chocolate shavings (optional)
Instructions
- Beat the cream cheese and mascarpone cheese until smooth.
- Gradually add the powdered sugar and mix until well combined.
- Whip the heavy cream in another bowl until stiff peaks form, then fold it into the cream cheese mixture.
- Dip each gluten-free ladyfinger briefly into the brewed coffee, then layer them at the bottom of a springform pan.
- Spread half of the cream cheese mixture over the ladyfingers.
- Repeat with another layer of dipped ladyfingers and remaining cream cheese mixture.
- Smooth the top and cover with plastic wrap.
- Refrigerate for at least 360 minutes or overnight.
- Before serving, dust the top with cocoa powder and garnish with chocolate shavings if desired.
Notes
Ensure your cream cheese and mascarpone are at room temperature for easier mixing. For a stronger coffee flavor, add a bit of coffee liqueur to the coffee used for dipping.
