Ingredients

  • 1/2 cup coconut flour
  • 1/2 teaspoon baking soda

  • 1/2 cup sugar or sweetener of choice
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup cream cheese, softened
  • 1/2 cup chopped strawberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix together the almond flour, coconut flour, baking soda, and salt in a bowl.
  3. Cream the softened butter and sugar until light and fluffy in a separate bowl.
  4. Beat in the egg and vanilla extract, then add the cream cheese and mix until combined.
  5. Gradually add the dry ingredients to the wet ingredients until everything is mixed well.
  6. Fold in the chopped strawberries gently.
  7. Drop tablespoon-sized portions of dough onto the prepared baking sheet.
  8. Bake for 12-15 minutes until the edges are golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
