Instructions
- Preheat your oven to 350°F and line a large baking sheet with parchment paper.
- Cream the softened butter and granulated sugar together for 2 minutes until light and fluffy.
- Add the egg and vanilla extract, and beat until smooth.
- Mix in gluten-free flour, cornstarch, baking soda, and salt on low speed until a soft dough forms.
- Fold in the rainbow sprinkles gently using a spatula.
- Scoop 1.5-tablespoon sized balls of dough onto the prepared baking sheet.
- Bake for 9-11 minutes until centers look slightly underbaked.
- Let the cookies rest on the pan for 10 minutes before transferring to a wire rack.
