Ingredients

  • 2 tsp Vanilla Extract
  • 1 1/2 cups Gluten Free All-Purpose Flour
  • 1 tbsp Cornstarch
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/2 cup Rainbow Sprinkles

Instructions

  1. Preheat your oven to 350°F and line a large baking sheet with parchment paper.
  2. Cream the softened butter and granulated sugar together for 2 minutes until light and fluffy.
  3. Add the egg and vanilla extract, and beat until smooth.
  4. Mix in gluten-free flour, cornstarch, baking soda, and salt on low speed until a soft dough forms.
  5. Fold in the rainbow sprinkles gently using a spatula.
  6. Scoop 1.5-tablespoon sized balls of dough onto the prepared baking sheet.
  7. Bake for 9-11 minutes until centers look slightly underbaked.
  8. Let the cookies rest on the pan for 10 minutes before transferring to a wire rack.

Notes

For a twist, substitute sprinkles with chocolate chips or nuts.
