- 1 cup gluten free all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon pumpkin pie spice
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/2 cup pumpkin puree
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Whisk together the gluten free flour, baking powder, baking soda, salt, and pumpkin pie spice in a bowl.
- Blend the pumpkin puree, vegetable oil, eggs, vanilla extract, sugar, and brown sugar in another bowl until smooth.
- Mix the dry ingredients into the wet ingredients until just combined.
- Fill muffin cups about 2/3 full with the batter.
- Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
- Let cool before serving.
Notes
Best served warm, can be enjoyed plain or with butter. Pairs well with coffee or tea.
