Ingredients

  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the gluten-free flour, sugar, baking powder, and salt in a large bowl.
  3. Mix the milk, vegetable oil, eggs, and vanilla extract until well combined in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean.
  7. Allow to cool for a few minutes before serving.
