Description

Delicious gluten-free cookies filled with sweet maple praline and crunchy pecans.


Ingredients

  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chopped pecans
  • 1 cup maple praline filling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Add the egg and vanilla extract, mixing until fully incorporated.
  4. Whisk together the gluten-free flour, baking soda, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  6. Fold in the chopped pecans.
  7. Scoop a tablespoon of cookie dough onto a lined baking sheet, flatten it, and place a small amount of maple praline filling in the center.
  8. Enclose the filling with the dough and shape it into a ball.
  9. Bake for 10-12 minutes or until the edges are golden.
  10. Allow to cool before serving.
