Ingredients

- 2 cups gluten-free flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup chopped pecans
- 1 cup maple praline filling
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and granulated sugar until smooth.
- Add the egg and vanilla extract, mixing until fully incorporated.
- Whisk together the gluten-free flour, baking soda, and salt in a separate bowl.
- Gradually add the dry ingredients to the wet mixture, stirring until combined.
- Fold in the chopped pecans.
- Scoop a tablespoon of cookie dough onto a lined baking sheet, flatten it, and place a small amount of maple praline filling in the center.
- Enclose the filling with the dough and shape it into a ball.
- Bake for 10-12 minutes or until the edges are golden.
- Allow to cool before serving.
Notes
Best served warm. Can be paired with vanilla ice cream or enjoyed with coffee or tea.
