Description

A quick and easy single-serving gluten-free lemon mug cake bursting with fresh lemon flavor.


Ingredients

Scale
  • 3 tablespoons Almond Flour
  • 1 1/2 tablespoons Butter (melted)
  • 1 large Egg
  • 1/2 teaspoon Baking Powder
  • 1/4 teaspoon Coconut Flour
  • 1 tablespoon Granular Sugar or Erythritol Granular Sweetener
  • 1/4 teaspoon Pure Vanilla Extract
  • 1 tablespoon Lemon Juice
  • Chocolate Chips (to add on top)

Instructions

  1. Add all the ingredients to a large microwave-safe mug.
  2. Using a small whisk, mix everything until well combined and smooth.
  3. Stir in the lemon zest.
  4. Cook in the microwave for 1 minute and 45 seconds, adjusting time based on microwave power.
  5. Remove, add chocolate chips on top, and serve.

Notes

Serve warm and enjoy on its own, or add whipped cream or ice cream. Store leftovers for up to a day in the refrigerator.
