Ingredients

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sprinkles
  • 1/2 cup dairy-free chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Combine gluten-free flour, baking powder, baking soda, and salt in a bowl.
  3. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy in another bowl.
  4. Beat in the eggs one at a time, then stir in the vanilla.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the sprinkles and chocolate chips, if using.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 45-50 minutes or until a toothpick comes out clean.
  9. Allow to cool before slicing and enjoy!
