- 1 cup almond flour
- 1/2 cup coconut flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup espresso or strong coffee, cooled
- 1 cup toffee bits
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Mix together almond flour, coconut flour, baking soda, and salt in a large bowl.
- Cream together brown sugar, granulated sugar, and softened butter until fluffy.
- Beat in eggs and vanilla extract.
- Stir in the dry ingredients and coffee until just combined.
- Fold in the toffee bits.
- Pour the batter into the prepared loaf pan.
- Bake for 45-55 minutes, or until a toothpick inserted comes out clean.
- Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Serve warm or at room temperature, pairs well with coffee or tea. Can add butter or cream cheese on top for extra flavor.
