Description

Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup espresso or strong coffee, cooled
  • 1 cup toffee bits

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mix together almond flour, coconut flour, baking soda, and salt in a large bowl.
  3. Cream together brown sugar, granulated sugar, and softened butter until fluffy.
  4. Beat in eggs and vanilla extract.
  5. Stir in the dry ingredients and coffee until just combined.
  6. Fold in the toffee bits.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 45-55 minutes, or until a toothpick inserted comes out clean.
  9. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Serve warm or at room temperature, pairs well with coffee or tea. Can add butter or cream cheese on top for extra flavor.
