Description

Delicious gluten-free cookies that combine the rich flavors of traditional creme brulee with the convenience of a cookie.


Ingredients

  • 1 cup almond flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon heavy cream
  • Granulated sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix together the almond flour, sugar, and salt in a bowl.
  3. Cream together the butter and sugar until light and fluffy in another bowl. Add the egg, vanilla extract, and heavy cream, mixing until smooth.
  4. Incorporate the dry ingredients into the wet mixture until combined.
  5. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Flatten each cookie slightly and sprinkle a little granulated sugar on top.
  7. Bake for 12-15 minutes or until the edges are golden.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  9. Caramelize the sugar on top of the cookies with a kitchen torch before serving for a crispy topping.

Notes

Ensure your butter is at room temperature for easier mixing. Flattening the cookies helps them spread evenly. If you don’t have a kitchen torch, you can broil the cookies briefly to caramelize the sugar.
