- 1 cup almond flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 tablespoon heavy cream
- Granulated sugar for topping
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix together the almond flour, sugar, and salt in a bowl.
- Cream together the butter and sugar until light and fluffy in another bowl. Add the egg, vanilla extract, and heavy cream, mixing until smooth.
- Incorporate the dry ingredients into the wet mixture until combined.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each cookie slightly and sprinkle a little granulated sugar on top.
- Bake for 12-15 minutes or until the edges are golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- Caramelize the sugar on top of the cookies with a kitchen torch before serving for a crispy topping.
Notes
Ensure your butter is at room temperature for easier mixing. Flattening the cookies helps them spread evenly. If you don’t have a kitchen torch, you can broil the cookies briefly to caramelize the sugar.
