Description

A healthy and delicious gluten-free bread made with cottage cheese and almond flour, perfect for breakfast or snacks.


Ingredients

  • 2 cups Cottage Cheese (not low fat!)
  • 4 cups Almond Flour
  • 2 Eggs
  • 4 Egg Whites
  • 1 tablespoon Baking Powder

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper for easy removal.
  2. Combine the cottage cheese, eggs, and egg whites in a blender. Blend until smooth.
  3. Mix the almond flour and baking powder in a large bowl.
  4. Pour the blended mixture into the bowl with dry ingredients. Stir until well combined.
  5. Carefully pour the batter into the prepared loaf pan and bake for 60 minutes.
  6. Remove the bread from the oven and let it cool for 1 hour. Lift out using parchment paper and slice as desired.

Notes

Store leftover bread tightly wrapped or in an airtight container in the refrigerator for up to 5 days. For longer storage, freeze slices wrapped in plastic wrap.
