A healthy and delicious gluten-free bread made with cottage cheese and almond flour, perfect for breakfast or snacks.

- 2 cups Cottage Cheese (not low fat!)
- 4 cups Almond Flour
- 2 Eggs
- 4 Egg Whites
- 1 tablespoon Baking Powder
Instructions
- Preheat the oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper for easy removal.
- Combine the cottage cheese, eggs, and egg whites in a blender. Blend until smooth.
- Mix the almond flour and baking powder in a large bowl.
- Pour the blended mixture into the bowl with dry ingredients. Stir until well combined.
- Carefully pour the batter into the prepared loaf pan and bake for 60 minutes.
- Remove the bread from the oven and let it cool for 1 hour. Lift out using parchment paper and slice as desired.
Notes
Store leftover bread tightly wrapped or in an airtight container in the refrigerator for up to 5 days. For longer storage, freeze slices wrapped in plastic wrap.
