- 1 1/4 cups Almond Flour
- 1/2 cup powdered Sugar (or powdered Sweetener for a low carb version)
- 1/2 cup Butter (softened)
- 1 Egg (large)
- 1 Egg White
- 1 teaspoon Vanilla Extract
- 1/2 teaspoon Salt
Instructions
- Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.
- Beat the softened butter with the powdered sugar or sweetener for about 2 minutes until fluffy.
- Add the egg, egg white, and vanilla extract. Mix this together until well combined.
- Next, add the almond flour and salt. Mix until everything is fully combined.
- Cut a hole in a piping bag – about 1 inch in diameter. Fill the bag with the cookie mixture.
- Pipe 2-3 inch long logs onto the prepared baking sheet.
- Bake for about 22-25 minutes until they turn lightly golden brown.
- Remove the cookies from the oven and let them cool for at least 25 minutes. Enjoy!
Notes
These cookies are best enjoyed fresh but can also be served with tea or coffee. Store them in an airtight container at room temperature for up to a week.
