A delicious and hearty gluten-free clam chowder that’s creamy and packed with flavor, perfect for cold days.
Ingredients

- 4 slices of bacon, chopped
- 1 medium onion, diced
- 2 ribs celery, diced
- 2 medium potatoes, peeled and diced
- 2 cups clam juice
- 1 can (6.5 ounces) chopped clams, drained
- 1 cup heavy cream
- Salt and pepper to taste
- 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
Instructions
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the fat in the pot.
- Add the onion and celery to the pot, and sauté until softened.
- Stir in the diced potatoes and clam juice. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Add the clams, heavy cream, thyme, salt, and pepper. Heat through, but do not boil.
- Serve hot, topped with the crispy bacon.
Notes
For extra flavor, add a dash of hot sauce or a sprinkle of paprika. Use gluten-free bacon and clam juice to keep it gluten-free.
