- 1 lb chicken breast, diced
- 1 cup plain yogurt
- 2 tablespoons lemon juice
- 2 tablespoons garam masala
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 onion, diced
- 1 can (14 oz) diced tomatoes
- 1 cup coconut milk
- Salt to taste
- Fresh cilantro, for garnish
Instructions
- Combine yogurt, lemon juice, garam masala, cumin, coriander, turmeric, garlic, and ginger in a bowl. Add the chicken and marinate for at least 1 hour.
- Sauté the onion in a large skillet until translucent.
- Add the marinated chicken and cook until browned.
- Stir in the diced tomatoes and coconut milk, and let it simmer for 15-20 minutes.
- Season with salt and garnish with cilantro before serving.
