- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1/2 cup gluten-free flour
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 2 tablespoons capers
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt and pepper.
- Dredge the chicken in gluten-free flour, shaking off the excess.
- Heat olive oil and butter in a large skillet over medium heat.
- Add the chicken and cook until golden brown and cooked through, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.
- Add the chicken broth, lemon juice, and capers to the same skillet. Bring to a simmer, scraping up any browned bits from the pan.
- Return the chicken to the skillet and cook for another 2-3 minutes.
- Garnish with fresh parsley before serving.
