  • 1/2 cup gluten-free flour
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tablespoons capers
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Dredge the chicken in gluten-free flour, shaking off the excess.
  3. Heat olive oil and butter in a large skillet over medium heat.
  4. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.
  5. Add the chicken broth, lemon juice, and capers to the same skillet. Bring to a simmer, scraping up any browned bits from the pan.
  6. Return the chicken to the skillet and cook for another 2-3 minutes.
  7. Garnish with fresh parsley before serving.
