Ingredients

- 2 cups gluten free flour blend
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup sugar
- 1/2 cup butter, softened
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup buttermilk
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
- In a bowl, mix the gluten free flour, baking powder, baking soda, and salt.
- In another bowl, cream together the butter and sugar. Add eggs one at a time, beating well after each addition. Stir in vanilla.
- Gradually add the dry ingredients to the wet mixture, alternating with buttermilk until well combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 25 to 30 minutes or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
To store, keep in an airtight container at room temperature for up to three days, in the fridge for up to a week, or freeze for up to three months.
