A gluten-free twist on the classic Cajun shrimp and grits, featuring spicy shrimp served over creamy grits.

- 1 lb shrimp, peeled and deveined
- 1 cup gluten-free grits
- 4 cups water or chicken broth
- 2 tbsp Cajun seasoning
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1/2 cup shredded cheddar cheese
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- Bring water or broth to a boil in a medium saucepan.
- Stir in grits, reduce heat, and simmer for 20 minutes, stirring occasionally.
- While grits cook, heat olive oil in a skillet over medium heat.
- Add shrimp and Cajun seasoning, cooking until shrimp turn pink, about 3 minutes per side.
- Stir garlic into the shrimp during the last minute of cooking.
- Remove grits from heat, stir in butter and cheese until melted.
- Serve shrimp over grits.

- Adjust Cajun seasoning to your preferred spice level.
- For extra creaminess, substitute half the water with milk.
