- 1/2 cup unsalted butter, softened
- 1/2 cup Biscoff cookie butter
- 3 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder

- 1/2 cup milk or dairy-free milk
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- Cream together the butter, cookie butter, and sugar until smooth.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Whisk together the gluten free flour, baking powder, and salt in a separate bowl.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk until well combined.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving.
Notes
You can serve this cake plain, with powdered sugar, or a drizzle of melted Biscoff cookie butter on each slice. Pairs well with coffee or tea.
