Ingredients

  • 2 ripe bananas
  • 1 cup gluten-free graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 2 cups milk
  • 3 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 tablespoon powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, combine the gluten-free graham cracker crumbs and melted butter, then press the mixture into the bottom of a pie pan to form a crust. Bake for 10 minutes and let cool.
  2. In a saucepan, whisk together sugar, cornstarch, and salt. Gradually whisk in milk and cook over medium heat, stirring constantly until it thickens.
  3. Remove from heat and whisk in egg yolks and vanilla until smooth. Pour the filling into the cooled crust.
  4. Slice bananas and layer them on top of the filling.
  5. In a separate bowl, whip the heavy cream with powdered sugar until soft peaks form. Spread the cream over the bananas.
  6. Chill for at least 180 minutes before serving.

Notes

Use ripe bananas for optimal flavor. For extra creaminess, consider adding a tablespoon of cream cheese to the filling. Chill longer for a firmer texture.
