- 2 ripe bananas
- 1 cup gluten-free graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 1/2 cup sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 2 cups milk
- 3 large egg yolks
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1 tablespoon powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). In a bowl, combine the gluten-free graham cracker crumbs and melted butter, then press the mixture into the bottom of a pie pan to form a crust. Bake for 10 minutes and let cool.
- In a saucepan, whisk together sugar, cornstarch, and salt. Gradually whisk in milk and cook over medium heat, stirring constantly until it thickens.
- Remove from heat and whisk in egg yolks and vanilla until smooth. Pour the filling into the cooled crust.
- Slice bananas and layer them on top of the filling.
- In a separate bowl, whip the heavy cream with powdered sugar until soft peaks form. Spread the cream over the bananas.
- Chill for at least 180 minutes before serving.
Notes
Use ripe bananas for optimal flavor. For extra creaminess, consider adding a tablespoon of cream cheese to the filling. Chill longer for a firmer texture.
