Description

Delicious and healthy gluten-free baked zucchini crisps that make a perfect snack alternative to chips.


Ingredients

  • 2 medium zucchinis
  • 1 cup gluten free breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the zucchinis into thin rounds.
  3. In a bowl, mix the gluten free breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  4. In another bowl, beat the egg.
  5. Dip each zucchini slice into the egg and then coat it with the breadcrumb mixture.
  6. Place the coated slices on a baking sheet lined with parchment paper.
  7. Spray lightly with olive oil.
  8. Bake for 15-20 minutes or until golden brown and crispy.
