- 2 medium zucchinis
- 1 cup gluten free breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Olive oil spray
Instructions
- Preheat your oven to 425°F (220°C).
- Slice the zucchinis into thin rounds.
- In a bowl, mix the gluten free breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
- In another bowl, beat the egg.
- Dip each zucchini slice into the egg and then coat it with the breadcrumb mixture.
- Place the coated slices on a baking sheet lined with parchment paper.
- Spray lightly with olive oil.
- Bake for 15-20 minutes or until golden brown and crispy.
- Serve warm and enjoy as a snack!
