- 2 1/2 cups gluten-free flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 5 cups sliced apples (preferably Granny Smith)
- 2 tablespoons lemon juice
- 1 tablespoon cornstarch
Instructions
- Preheat your oven to 375°F (190°C).
- Mix the gluten-free flour, granulated sugar, salt, and cinnamon in a large bowl.
- Cut in the softened butter until the mixture resembles coarse crumbs.
- Add the vanilla extract and mix until a dough forms.
- Roll out half of the dough and place it in a pie dish.
- Toss the sliced apples with lemon juice, brown sugar, and cornstarch in another bowl.
- Pour the apple mixture into the pie crust.
- Roll out the remaining dough and place it over the apples, sealing the edges.
- Cut slits in the top crust to allow steam to escape.
- Bake for 45-50 minutes or until the crust is golden brown.
- Let cool before serving.

Serve warm with a scoop of vanilla ice cream or whipped cream for added flavor.
