- 1 lb ground lamb or beef
- 1 onion, chopped
- 2 carrots, diced
- 2 cups frozen peas
- 2 cups mashed potatoes (gluten free)
- 2 tbsp tomato paste
- 1 cup beef broth
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs (optional, for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Heat olive oil in a large skillet over medium heat. Add onion and carrots, sautéing until softened.
- Add ground meat and cook until browned.
- Stir in tomato paste and beef broth, then add peas and season with salt and pepper.
- Spread the meat mixture into a baking dish.
- Top with mashed potatoes, smoothing out with a spatula.
- Bake in the preheated oven for 20-25 minutes, until the top is golden brown.
- Remove from the oven, let cool slightly, and garnish with fresh herbs if desired before serving.
Notes
For a creamier topping, add a splash of milk or cream to the mashed potatoes before spreading them over the meat mixture.
