Ingredients

  • 1 1/2 cups gluten-free all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tbsp red food coloring
  • 1 tsp vanilla extract
  • 1 tsp white vinegar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Sift together the gluten-free flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  3. Mix the buttermilk, vegetable oil, eggs, food coloring, vanilla extract, and vinegar in another bowl.
  4. Combine the wet ingredients with the dry ingredients and mix until well combined.
  5. Fill each cupcake liner 2/3 full with the batter.
  6. Bake for 20-22 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cupcakes to cool before frosting with your favorite icing.

Notes

For best results, use room temperature ingredients and ensure your gluten-free flour blend contains xanthan gum.
