Description

Delightful gluten-free cookies with a chewy texture, sweetened with raisins and honey or maple syrup.


Ingredients

  • 2 cups gluten free oats
  • 1 cup almond flour
  • 1/2 cup brown sugar
  • 1/2 cup honey or maple syrup
  • 1/2 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1 cup raisins
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together oats, almond flour, baking soda, cinnamon, and salt.
  3. In another bowl, whisk together melted coconut oil, brown sugar, honey or maple syrup, and vanilla extract.
  4. Combine the wet and dry ingredients and stir until well mixed.
  5. Fold in the raisins.
  6. Scoop tablespoonfuls of the dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes, or until lightly browned.
  8. Let cool before serving.
