Delightful gluten-free cookies with a chewy texture, sweetened with raisins and honey or maple syrup.

- 2 cups gluten free oats
- 1 cup almond flour
- 1/2 cup brown sugar
- 1/2 cup honey or maple syrup
- 1/2 cup coconut oil, melted
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1 cup raisins
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together oats, almond flour, baking soda, cinnamon, and salt.
- In another bowl, whisk together melted coconut oil, brown sugar, honey or maple syrup, and vanilla extract.
- Combine the wet and dry ingredients and stir until well mixed.
- Fold in the raisins.
- Scoop tablespoonfuls of the dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes, or until lightly browned.
- Let cool before serving.
